Banana oat protein cookies

As promised, when I posted this picture on my Instagram account, I said I would post the recipe on my blog, so here it is. My recipe for banana oat protein cookies.

These are probably one of my favourite snacks to have when I'm on the go for a pick-me-up snack, or if I need to eat something small before training. They are also great for post-workout as they have a good ratio of carbs to protein for muscle building and recovery after training.

 

Ingredients:

2 cups raw oats

1 cup sultanas (or good quality dark chocolate chips)

1/2 cup desiccated coconut

1 scoop vanilla whey protein

2 egg whites

¼ cup crushed walnuts

1 tsp vanilla essence

1 banana mashed

¼ cup pure maple syrup

¼ cup macadamia or extra virgin olive oil

Instructions:

Heat the oven to 180C degrees.

Mix all the of the dry ingredients (oats, coconut, protein powder, crushed nuts) and the wet ingredients (egg whites, vanilla essence, banana, maple syrup, oil). Then combine them together.

Form approximately 15 cookies and bake on the tray for 15 minutes or so until they are light golden brown.

Leave to cool and enjoy. You can store these in the fridge in an airtight container for up to 5 days.

*You can also make these into healthy muesli bars by adding a spoonful of almond butter and some mixed seeds. Press into a baking tray, bake in the oven, and cut into bars when cold.
