Spicy Tahini Dressing

Here's my favourite tahini dressing recipe. This dressing is very tasty & verstile.

You can serve it with rice, couscous, bread, fish, meat, chicken, or as a salad dressing & it also makes a lovely vegetarian & vegan side dish. It's delicious with tofu & other vegetarian friendly foods.

Tonight I had it with grilled fried chicken & sliced vegetables.

Ingredients:

-2 cloves minced fresh garlic

-1 tbsp olive oil

-1/2 cup tahini

-1/3 cup water

-juice of two lemons

-1/4 cup fresh coriander

-1 tsp chili flakes or cayenne pepper

-1/4 cup toasted pine nuts (optional)

-Salt and pepper to taste

Instructions:

In a small bowl mix the tahini, water and lemon juice until creamy (it should be smooth like cake batter) and set aside.

In a saucepan heat the olive oil and saute the garlic for 1 minute, then add the coriander and chilli flakes and stir for another minute. Remove from the heat.

Pour in the tahini mixture and whisk to combine. Season with salt and pepper to taste. It should be a creamy pourable dipping sauce consistency, and you can add a bit more water if needed or if you would like it to be thinner.

Finally stir in the toasted pine nuts. (This is optional but it makes a lovely addition)
