Here's one of the snacks in my 12 week Nutrition & Training program. It's a recipe for delicious nut butter energy bites. This is a great option for post workout or a quick breakfast on the run if you just add a protein shake.
1 cup rolled oats
2/3 cup shredded coconut
1/2 cup all natural nut butter
1/2 cup ground flaxseed
1/3 cup honey
1 teaspoon vanilla extract
In a medium bowl, combine the oats, coconut, nut butter, flaxseed, honey and vanilla and stir to mix thoroughly. Refrigerate for 30 minutes.
Rolled the chilled dough into balls about the size of a walnut. Store in the fridge in an airtight container for up to 1 week.
Servings: 12 – 2 balls per serving
