Pad Ka-Prao (Ground meat stir fired with Thai basil)

Growing up in Thailand, this was one of my favourite dishes. It’s a simple & very tasty dish you can make. You can have it on its own, in lettuce leaves or with Jasmine rice. It’s great for meal prep as well as it tastes even better heated up the next day!

You can actually make this with any mince meat. Mince beef, mince pork, mince chicken or mince turkey. They all work really well and taste great!

Here is the recipe! This serves 6 (or 3 if you eat as much as me :) Enjoy!

Ingredients:

2 tablespoons peanut oil

500g lean beef mince

3 long red and/or green chillies, sliced

4 cloves garlic, finely chopped

2 tablespoons fish sauce

3 tablespoons soy sauce

1 tablespoon coconut sugar

1 tablespoon oyster sauce

3 green onions, thinly sliced

1/3 cup Thai basil leaves

Instructions:

Heat oil in a large frypan over high heat. Add half the mince and cook, stirring continuously, until well-browned. Remove and repeat with remaining mince.

Return mince to pan and add chillies, garlic, fish sauce, soysauce, coconut sugar, oyster sauce, & stir until well-combined. Bring to a boil. Reduce the heat to medium-low and simmer. Add spring onions and cook for 4 minutes.

Remove from heat and fold through basil. Serve with Jasmine rice (for more carbs) or pour into washed lettuce cups and serve immediately.
