These brownies are pretty awesome. They are high in protein & made with sweet potato. Even though it's probably hard to believe (and you may very well be rolling your eyes right now) they actually taste like the real deal and are insanely delicious. So don't knock it till you try it!
This is one of the snacks in my 12 week meal plan. I like to include some healthy sweet snacks because who doesn't love yummy food!
40g vanilla protein
70g almond meal
40g cacao powder
65g stevia sweetener
150g (raw) sweet potato, steamed and mashed
1 egg
1/3 cup maple syrup
1/2 tbsp baking soda
30g cacao nibs for crunch *optional
Preheat oven to 180 and line a brownie tin Mix all ingredients except cacao nibs together until smooth Make sure sweet potato is steamed and mashed prior Stir through cacao nibs and pour into tin Bake for 20 minutes or until toothpick comes out clean
