Here is a recipe for you to try. Test out these awesome slices for a treat. They are quite dense, so if you are trying to lose fat, make sure you take into account the macros (see below). But they are a great source of good fats, and a good low carb option as well.
The magic lies in roasting the nuts beforehand in the oven. It gives it that x factor. Don't skip that step. Trust me on this. (For my clients, one serving = 15g or one serving of fat)
*Makes 24 square size bars
120g raw cashews
150g raw almonds
2scoops protein protein powder (60g)
30g goji berries
30g raw cocao powder
2 tbsp chia seeds
220g shredded coconut
4 tbsp honey
60g coconut oil
Start by roasting the nuts in the oven with for 10min/180degrees and then allow to cool.
Place the almonds, cashews, berries, protein powder, chia seeds, cacao powder into a high speed processor bowl (or TMbowl). Blend on high speed food processor until finely chopped. (For thermomix: 15 sec/Sp 7) Scrape down the bowl with a spatula.
Add coconut oil & honey to the dry mixture and mix on medium speed in the processor or thermomix (For thermomix: 20 sec/Sp 5. Ensure the oil has mixed into the mixture.
Line a baking dish and pour mixture into the dish, press it down and refrigerate for 1 hr. Best kept in the fridge.
